Ingredients
- 1 cup all-purpose flour
- ¼ cup unsweetened cocoa powder 1/ 4 cup brown sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 egg
- ¼ teaspoon salt
- ½ cup milk
- 2 tablespoons butter
- ¼ cup chocolate chips
- ¼ cup grated zucchini
Instructions
- Preheat the oven to 350 degrees and apply nonstick spray to 6 cups of a muffin tin.
- Combine flour, cocoa powder, sugar, baking powder, baking soda and salt in a bowl.
- Add the egg, melted butter and milk and stir then fold in zucchini and chocolate chips.
- Fill each muffin cup about ¾ full.
- Bake for 20 minutes then insert a toothpick into the muffins and if it comes out clean, they are done. Otherwise, cook an additional 5 minutes.
- Remove from the oven and let cool.
